Crispy General Tso's Chicken
  1. In a large bowl, marinade cut up chicken with cornstarch, AP flour, water, salt, baking powder, garlic powder, and white pepper. Marinate for at least 15 mins or 2 hours for best results. Overnight is even better.

  2. In a small bowl, combine water, rice vinegar, sugar, hoisin sauce, Shao xing wine, garlic and ginger. Mix well and set aside.

  3. Heat wok with enough oil to fry chicken to 350F. Fry battered chicken for 5-6 mins or until lightly golden. Fry in small batches. Strain.

  4. Double fry chicken a second time for another 4-5 mins to ensure a golden color and for extra crunch.

  5. Remove all but 1 tbsp of frying oil from wok. Heat oil and sauté dried chilies for 30 seconds. (Do not burn)

  6. Pour in sauce and bring to a boil. Add slurry and the sauce with thicken up.

  7. Add all of the fried chicken into the sauce. Toss until everything is evenly coated.

  8. Garnish with toasted sesame seeds and green onions. Enjoy!
