Peel + Chop mangos, place in bowl with salt and cover with water and stand for 2-3 hrs
Strain + discard fluid. Place Sugar + Vinegar in saucepan + bring to boil stirring until sugar dissolves, add mangoes and all remaining ingredients + bring to the boil.
Reduce heat + simmer, remember to check and stir from time to time.
(Approx. 1½ hours or until chutney is thick)
Laddle into warm sterile jars
