  1. Roughly chop the onion, garlic, carrot and mushrooms and fry in a little oil for 5-8mins.

  2. Stir in the tomato paste and flour.

  3. Deglaze the pot with the red wine.

  4. Add the water, soy sauce, mustard, bay leaves, thyme, salt, pepper and sugar.

  5. Let it simmer 10-15mins.

  6. Strain through a sieve.

  7. Heat the sauce up again to let it thicken a bit more.
