Season the thinly sliced chicken breast with 2 tsp sesame oil, ½ tsp salt, pepper, and paprika
Heat a large pan or wok over medium-high heat
Cook the seasoned chicken until golden and cooked through, then set aside
In the same pan, add minced garlic and cook for about 30 seconds until fragrant
Add the sliced white onion, red pepper, and shredded carrots, stir-fry for 3-4 minutes
Add the green onions and stir-fry for another minute
Return the cooked chicken to the pan
Add the cooked noodles to the pan
In a small bowl, mix together low sodium soy sauce, hot sauce, honey, and sweetener
Pour the sauce over the noodles and chicken, toss everything together until well coated
Stir-fry for 2-3 minutes until everything is heated through
Serve and top with sliced green onions and sesame seeds if desired
