Masala Shrimp
  1. Finely chop onions and tomatoes or use a food processor.

  2. Heat the oil in a large pan. The oil should be hot but not smoking hot

  3. Sauté onions until brown

  4. Add ginger and garlic and sauté until fragrant

  5. Add a splash of water to prevent the spices from burning in the next step

  6. Add chilli powder, turmeric powder, ground coriander, ground cumin. Fry on low heat until fragrant.

  7. Add chopped tomatoes and salt to help tomatoes soften

  8. Cover for 3-4 min on medium heat

  9. Mash the tomatoes after they have softened and cover again for 3-4 minutes on medium heat. Until it forms a paste

  10. Add sugar

  11. Add cooked prawns and coat with masala

  12. Add water and cook prawns further

  13. Add heavy crème

  14. Add salt to taste.

  15. Add chopped chilli and coriander

  16. Add garam masala
