Cook the noodles in a saucepan of boiling water following packet directions. Drain.
Meanwhile, heat the oil in a large, deep frying pan or wok over high heat. Add the beef. Cook, using a wooden spoon to break up any lumps, for 5 minutes or until browned. Add the stir-fry vegetables and cook, stirring, for 2-3 minutes or until the vegetables soften slightly. Add the teriyaki sauce and toss until well combined.
Add the noodles to the beef mixture and toss until well coated. Divide among serving bowls to serve.
