Chicken Shawarma With Homemade Tzatziki
  1. Slice chicken thighs into thin strips and add to a large bowl

  2. Add olive oil, tomato paste, Greek yogurt, lemon juice, and all the spices. Mix until evenly coated

  3. Marinate for at least 30 minutes, or up to overnight

  4. Cut the tops off two garlic heads, drizzle with olive oil and salt, wrap in foil, and place in a baking dish with the chicken

  5. Bake at 425°F for 25 minutes until the chicken is golden and slightly charred

  6. Squeeze the roasted garlic into the chicken and toss before serving

  7. Mix Greek yogurt, grated cucumber, mayonnaise, olive oil, lemon juice, dill, salt and pepper until smooth

  8. Chill tzatziki for at least 30 minutes

  9. Toss cherry tomatoes, red onion, cucumber, parsley, dill, lemon juice, olive oil, salt and pepper together

  10. Let salad sit for 10 minutes in the fridge

  11. Warm pita or naan, spread tzatziki, add sliced chicken, spoon over the salad, drizzle more sauce, and wrap
