Preheat oven to 350°F
Peel garlic cloves and add to a small pot with olive oil, salt, pepper, thyme and rosemary; roast for about 1.5 hours
Preheat oven to 450°F
Add tomatoes, red onion, Kalamata olives, capers, garlic confit, garlic oil, white wine, Italian seasoning, lemon zest and juice to a skillet and roast for about 20 minutes
Add sardines on top and broil for about 5 minutes
Season baguette crostini with olive oil, salt and pepper and toast on a pan or griddle
Rub toasted crostini with a garlic clove
Serve sardines and sauce atop crostini or dip and enjoyy
