Lemon Ricotta Pasta
  1. Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside.

  2. In a large bowl, mix together the ricotta, Parmesan, lemon juice, lemon zest, olive oil, salt, and pepper until well combined.

  3. Add the cooked pasta to the ricotta mixture and toss to coat. Fold in the fresh basil.

  4. Serve immediately, garnished with extra Parmesan and basil if desired.
