Golden Almond Sleep Milk
  1. Soak the almonds in 400 ml hot water for 30 minutes.

  2. Drain the almonds, reserving 200 ml of the soaking water.

  3. Transfer the soaked almonds to a blender and add 200 ml of the reserved soaking water. Blitz briefly until smooth but leave a few small almond pieces for texture.

  4. Pour the almond milk into a small saucepan. Add turmeric, cardamom, cinnamon, nutmeg, fennel seeds, black pepper, honey or jaggery, and ghee or coconut oil. Stir to combine.

  5. Heat over medium-low and simmer for 6 minutes, stirring occasionally.

  6. Stir in the partially blended almond mixture until fully incorporated and warm.

  7. Pour into two mugs and top each with crushed pistachios.

  8. Sip about 30 minutes before bedtime to relax and unwind.
