Heat your oven to 375°F. In a large skillet or cast iron dish, add oil and bring the heat to 350°F.
In a bowl, combine Panko, Parmesan cheese, garlic, garlic salt, pepper, and finely chopped herbs. Blend well and set aside.
Create an egg wash by blending together the eggs and water. Set aside.
In a bag or bowl, add flour and salt. Mix together. Rinse pork chops, pat them dry, and coat them with the flour mixture.
Shake off excess flour from pork chops and dip them into the egg wash until fully coated. Immediately dredge them into the Panko mixture. Place on a wire rack for 3-5 minutes.
Deep fry until golden brown (about 3-4 minutes per side). Place on a baking sheet and bake for 10-15 minutes, depending on thickness, until fully cooked. The internal temperature should read 145 degrees, and pork chops should no longer be pink. Serve hot!
