Heat olive oil in a skillet, sauté onion and bell pepper until soft
Add ground beef, season with paprika, garlic powder, cumin, salt, and pepper, cook until browned
Stir in tomato sauce or salsa and simmer 5 minutes
Spoon beef mixture onto tortillas, top with cheddar and mozzarella
Fold tortillas into pockets and place seam-side down on a baking tray
Bake at 190°C (375°F) for 15–18 minutes until golden and crispy
Cool slightly and serve hot with favorite toppings
