Smoked Chicken Wings
  1. Dry off wings. Rub with mustard. Season liberally with rub and pepper.

  2. Heat pit to 260F. When charcoal is ready, add wood. Let burn 5-10 min.

  3. Load wings into pit and watch temperature. If temp drops to 250F, add more wood and charcoal.

  4. After about 1 hour, spray the wings with apple juice everytime you check on them or the fire.

  5. Continue smoking the wings about 2.5 hours. Spray with apple juice just before they come out of the pit and serve.
