Ube mix. In a small mixing bowl combine the Ube jam, Ube extract and water.
Dry Ingredients. In a mixing bowl combine mochiko flour, baking powder, sugar and salt.
Wet ingredients. In a separate large bowl whisk together the egg, coconut milk, vanilla extract and ube mixture.
Preheat the waffle iron to medium heat.
Combine wet and dry ingredients. Sift the dry ingredients into the wet ingredient bowl and combine.
Cook waffles. Brush or spray the waffle iron with butter or oil. Add approximately ½ cup of batter and cook for about 3-4 minutes.
Serve w/ butter and your choice of syrup.Enjoy!
