Prep/cook your sweet potatoes and puff pastry (if needed to be thawed).
Once potatoes are cooked, start making your filling by adding sweet potatoes, butter, brown sugar, granulated sugar, and cinnamon to a bowl. Mix until smooth and combined.
Flour your flat clean surface. Add puff pastry and roll out a wee bit.
Cut eat sheet into fours. This will create 8 turnovers.
Mix together your egg wash, egg plus 1 tbsp water. Brush along the edges.
Add your filling onto your pastry in the middle . Be sure to not add too much or it will spill out the sides .. or if you don't care like me .. then proceed with overfilling it 🤣
Fold into a triangle and use a fork to seal the ends of each pastry.
Make sure they are about 2 inches apart will baking because they will get bigger and puff up while baking.
Bake at 400F for 25-30 minutes until golden brown on top.
Take out of oven and let cool for about 5-7 minutes before putting icing on top.
Your icing is powdered sugar, milk, and vanilla extract or paste. Mix together and drizzle on top of pastries.
