Cuban Black Beans (frijoles Negros)
  1. Wash beans and place them in a large pot. Cover with 7 cups of water.

  2. To quick soak beans, bring to a boil then turn off heat, and let them sit covered for 1 hour.

  3. To the pot, add 2 tbsp of olive oil, half the green pepper, half the onion, 2 cloves crushed garlic, and bay leaves.

  4. Bring to a boil, then lower heat to medium-low, cover and cook for 1 hour.

  5. After, remove pepper, onion, bay leaf, and garlic clove.

  6. In a separate skillet, heat ½ cup olive oil and sautée other half of onion and green pepper, both chopped, until transparent.

  7. Add minced garlic, oregano, cumin, vinegar, and salt.

  8. Mix well and cook for 2 minutes then add to the beans.

  9. Stir and cook for another 30 minutes.

  10. Serve!
