Korean Potato Salad
  1. Boil potatoes until tender

  2. Boil eggs until cooked

  3. Peel and dice potatoes

  4. Peel and dice eggs

  5. Dice Persian cucumber

  6. Dice carrots

  7. Combine potatoes, eggs, cucumber, and carrots in a bowl

  8. Mix in mayo and sugar

  9. Stir until well combined

  10. Serve chilled or at room temperature
