Homemade Cheeze It Crackers
  1. Preheat oven to 375°F Line 2 baking sheets with parchment paper.

  2. In a food processor, combine the shredded cheddar, flour, and butter. Pulse about 30 seconds, until crumbly.

  3. Add the cold water and pulse again until the dough clumps together.

  4. Transfer dough to a two sheets of parchment paper. Roll out to about ⅛ inch thick.

  5. Using a knife or a pizza cutter, cut them into square shapes,. Place them on the prepared baking sheets. Poke a hole in the center of each Square.

  6. Bake for 15 minutes, until puffed and slightly crisp (do not let them brown).

  7. Cool on the baking sheet for at least 1 hour to fully crisp up.

  8. Store in an airtight container and enjoy!
