Homemade Pita
  1. Whisk together the flour, salt, and instant yeast in a large bowl.

  2. Add the lukewarm water and olive oil, and stir to combine.

  3. Knead the dough briefly in the bowl until it comes together.

  4. Cover the bowl and let the dough rise in a warm place for 1.5 to 2 hours.

  5. Turn the dough out onto a lightly floured surface and knead briefly.

  6. Divide the dough into 6 equal portions and ball up each one.

  7. Cover and let the dough portions rest for 30 minutes.

  8. Uncover and roll out each portion into a 6-inch round, then let rest for another 15 minutes.

  9. Cover the rounds with a towel as they rest.

  10. Bake 3 pitas at a time on a preheated baking steel at 550°F for 2-3 minutes.

  11. Wrap the baked pitas in a towel and let cool for 5 minutes before cutting and serving.
