Peri Peri Chicken
  1. Coat the chicken in the spices with a splash of oil and marinate it for an hour or two before cooking.

  2. Alternatively, add the chicken to the pan followed by the seasonings and mix it in.

  3. Add a tiny bit of fluid, either water or let the chicken release its own water, to allow the seasonings to coat the chicken and cook properly.

  4. Once the chicken is cooked, add the lemon juice and dried coriander. Stir for 40 to 50 seconds and immediately remove the chicken from the pan.

  5. Cook the vegetables on a high heat to achieve some charring.
