Heat the oil in a large pot over medium heat. When the oil shimmers, add the garlic, ginger, chili paste, and green onions. Cook 30 seconds to 1 minute until fragrant.
Add the broth, peanut butter, soy sauce, and coconut milk, stirring to combine.
Add the broccolini and cook until tender, about 8-10 minutes.
Meanwhile, cook the rice noodles according to package directions.
Once the broccolini is tender, remove it from the heat and stir in the cilantro and mint.
Ladle the soup into bowls and add a big handful of rice noodles.
Top with mango, cucumbers, and peanuts.
Zest the lime over each bowl.
