Preheat your oven to 375°F (190°C) and grease a 12-cup muffin tin.
In a skillet over medium heat, cook the ground beef sausage until browned and cooked through. Drain any excess fat and set aside to cool slightly.
In a large bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and onion powder until fully combined.
Stir in the shredded cheese, cooked sausage, and optional diced peppers and onions.
Pour the mixture evenly into the prepared muffin cups, filling each about ¾ full.
Bake for 20–25 minutes or until the muffins are set in the center and slightly golden on top.
Let the muffins cool in the tin for a few minutes before removing. Serve warm or store in the fridge for a quick breakfast option.
