In a large skillet or pot, cook the ground beef over medium heat until browned.
Drain any excess grease if needed. Add the diced onion and garlic, cooking until softened (about 3 minutes).
Stir in paprika, onion powder, garlic powder, smoked paprika (if using), salt, and pepper. Mix well.
Pour in the beef broth and milk, then stir in the pasta. Bring to a boil, then reduce heat to low. Cover and simmer for 12–15 minutes, stirring occasionally, until the pasta is tender.
Once the pasta is cooked and the liquid is mostly absorbed, stir in the shredded cheddar cheese until melted and creamy.
Remove from heat and let it sit for 5 minutes before serving. Garnish with parsley or additional cheese if desired.
