Carrot Cake Loaf
  1. Whisk together the sugars, eggs, oil and vanilla.

  2. Add the flour, baking powder, salt and spices and mix until just combined.

  3. Fold through the carrot, walnuts, raisins and tin fruit with the juice.

  4. Pour into a lined loaf tin and bake at 180°C for 60–65 minutes or until a skewer comes out clean.

  5. For the icing, beat together the butter, cream cheese, vanilla and icing sugar until smooth.

  6. Allow the loaf to cool completely before lathering, slicing and serving.
