Lazy Lasagna
  1. Heat a large skillet or pot over medium heat and add a drizzle of oil.

  2. Add onion and sauté for 2-3 minutes until softened. Stir in the garlic and cook for another minute or two.

  3. Add the ground meat and season with salt, pepper, and Italian seasoning. Cook until browned, breaking it apart as it cooks.

  4. Pour in the diced tomatoes (with juice), tomato sauce, and broth or water. Stir to combine and bring to a light boil.

  5. Add the broken lasagna noodles and stir well until all are coated in sauce and submerged. Cover and let simmer for 15-18 minutes, stirring occasionally, until noodles are tender and most liquid is absorbed.

  6. Lower heat and stir in the cottage cheese and ricotta until creamy. Sprinkle mozzarella over the top, cover, and let it melt for 2-3 minutes.
