Drop the ground beef into a large skillet over medium-high heat and break it apart.
Add the diced onions to the skillet. Stir well and continue cooking until the ground beef is fully browned.
Drain the grease from the skillet.
Add the strawberry jam, BBQ sauce, salt and pepper to the skillet and stir well.
Leave the sauce to simmer and thicken for about 8 minutes.
While the meat sauce mixture is simmering, pour the coconut milk, peanut butter and Thai sauce into a saucepan over low heat and stir.
Add the soy sauce and continue stirring until the peanut butter is fully melted and the sauce is smooth.
Scoop the thickened meat mixture onto buns and top with the peanut butter sauce.
