Preheat oven or air fryer to 400°F.
Sauté the sliced onion in a large skillet with olive oil or avocado oil over medium heat. Season with salt. Sauté for about 10 minutes.
While the onion cooks, cut your potatoes (e.g., thick cut, wedges, skinny). Coat in oil and season with salt, garlic powder, onion powder & paprika. Place in the oven for 15 minutes. Rotate the pan and roast for another 10-15 minutes, or until desired crispiness.
Add the sliced mushrooms to the skillet with the onions. Sauté until everything is soft and caramelized. Season with more salt if needed. Add a drizzle of balsamic vinegar at the end.
Move the onions and mushrooms to one side of the skillet. Add the ground beef to the empty side. Season the beef with paprika, garlic powder, onion powder, salt, and pepper. Cook the beef to your liking.
Prepare the burger sauce by combining Greek yogurt, mayo, yellow mustard, ketchup, Worcestershire sauce, white balsamic vinegar, paprika, garlic powder, salt, pepper, chopped pickles, and chopped caramelized onion in a small bowl. Mix until smooth.
Assemble your burger bowl with the cooked beef, sautéed onions and mushrooms, roasted potatoes, shredded cheese, and your desired toppings. Serve with the burger sauce.
