Whisk the water and yeast together, add the oil and quick whisk, then add flour and salt and mix well with a spatula, folding the mixture over till combined, scraped the sides and cover and rest for 40 minutes.
After 40 min wet your hand and do 5 stretch & folds, turning the bowl after each one. Grab the dough and flip it over then grab the dough again and fold it over itself. Do this folding over about 10-12 times. Cover the dough and place in the fridge for 6-24 hours depending when you want to eat your pizza.
Flour the top of dough and Turn the dough out on floured surface. Fold it up in 3rds and then roll it up. Stage the dough towards you to create a tight ball and cover on floured surface with flour on top of the dough for an hour.
Make your pizza sauce
Preheat oven to 250C it must be very hot and I normally heat a shallow large dish with water at the bottom to create steam.
Prepare a large oven dish with parchment paper and olive oil.
Heavily heavily flour your surface and dimple the dough as shown. Flip it over gently and dimple the other side. Gently get it over your arm and transfer to your dish. Add pizza sauce and spread it out. Bake for 15 min. Then take it out and quickly add any toppings and cheese (I used fresh mozzarella and grated mozzarella) and bake for another 8-10 min depending how crunchy you want it.
