Preheat the oven to 325 degrees F (165 degrees C).
Mix ground beef, mustard seed, liquid smoke, curing mixture, garlic powder, and pepper together with your hands in a large bowl.
Form beef mixture into two equal logs: wrap in aluminum foil with the shiny side facing the meat.
Refrigerate for 24 hours.
Poke small holes in the bottom of each log using a toothpick.
Place logs onto a broiler rack.
Fill the broiler pan with ½ inch water.
Bake in the preheated oven for 90 minutes.
Cool for 30 minutes.
Chill in the refrigerator for about 12 hours before serving.
