Prepare the Oven and Cauliflower:
Heat the oven to 425°F (220°C).
Wash the cauliflower head, pat dry, remove the leaves, and trim the stem. Break into uniform florets for even cooking.
Season and Roast:
Toss the cauliflower florets with olive oil, garlic powder, paprika, salt, and pepper in a large bowl until well coated.
Arrange the florets in a single layer on a parchment-lined baking sheet.
Roast for 20-25 minutes or until the cauliflower is tender and has a golden color.
Make the Sauce:
In a saucepan, heat olive oil over medium heat. Add garlic and sauté until fragrant, about 1-2 minutes.
Pour in the vegetable broth and bring to a simmer.
Add cream, Italian seasoning, and sun-dried tomatoes. Let simmer for 5 minutes to blend the flavors.
Stir in the Parmesan cheese until melted and smooth.
Combine and Serve:
When the cauliflower is roasted, mix it into the sauce, ensuring each floret is well coated.
Garnish with freshly chopped parsley.
Serve hot as a delicious side or a main dish.
