Simmer the whole peeled cloves and the roughly diced onion in the olive oil close to lowest heat until them become soft and caramelised.
Separate the oil (keep it and use as garnish for other dishes) then mash or blend then mix with the cream cheese, fresh herbs and lemon juice into a smooth paste/dip.
Garnish and serve with bread, pasta or whatever you want to add a garlicky kick too and enjoy!
