Cauliflower Spaghetti Cacio e Pepe
  1. Preheat oven to 180°C circulating air

  2. Soak cashews with hot water for 30 minutes

  3. Divide cauliflower on a baking sheet into small florets

  4. Season cauliflower with olive oil, salt and pepper

  5. Roast for 40 minutes

  6. Blend half of the roasted cauliflower with the soaked cashews, plant milk, salt, pepper, and lemon

  7. Cook noodles until al dente

  8. Mix noodles with the sauce and freshly ground black pepper

  9. Add the rest of the cauliflower on top

  10. Enjoy!
