Chinese Chicken Breast
  1. Slice chicken breast into thick pieces and pound lightly with a meat mallet.

  2. Smash ginger and mix with cooking wine.

  3. Massage the ginger wine and soy sauce into the chicken for about 1 minute.

  4. Add egg and cornstarch.

  5. Mix until evenly coated.

  6. Pan-fry chicken over medium heat until golden on both sides.

  7. Remove and set aside.

  8. In the same pan, fry ginger and scallion whites for about 1 minute.

  9. Lay the scallion greens underneath, then place the chicken on top.

  10. Pour in the sauce and water.

  11. Bring to a boil.

  12. Cover and simmer over medium-low heat for 10 minutes.

  13. Remove the lid and reduce the sauce until glossy.
