  1. Combine chicken with red chilli, turmeric, black pepper, ginger garlic, garam masala, salt, lemon juice and food colour. Marinate for as long as you can in the fridge.

  2. Add corn flour, all-purpose flour, egg white and baking soda. Mix and rest 20 minutes.

  3. Shallow fry chicken in oil until cooked and golden. Remove chicken and reserve leftover oil.

  4. In the same oil, sauté cumin, garlic, ginger, green chillies and curry leaves. Add salt, black pepper, red chilli, red chilli sauce, green chilli sauce, vinegar, soy sauce, lemon juice and yoghurt. Cook briefly until combined.

  5. Add fried chicken and toss to coat with the sauce.

  6. Garnish with cilantro and enjoy with naan or rumali roti.
