Hot Oil Noodles With Plant-based Burgers
  1. Finely slice your spring onions, separating the whites from greens. Mince your garlic and roughly chop your coriander. Bash up your peanuts.

  2. Slice your cucumber in half, deseed with a spoon then chop each half into 4 pieces. Use your palm to smash each part then chop into thin sticks.

  3. Add oil to a pan on medium heat then add your burger patties and bash them up until minced. Cook for 5 mins until browned.

  4. Meanwhile, cook your noodles according to package instructions. Drain then rinse with cold water to prevent sticking.

  5. Add your cooked noodles to a wide bowl along with spring onion whites, coriander, garlic and all your seasonings and sauces.

  6. Heat 6 tablespoons of oil on medium-high heat until sizzling hot then pour over your noodles and mix to combine until evenly coated. Add noodle cooking water if needed to loosen.

  7. Add your minced plant based meat and cucumber, give it another toss. Sprinkle over the spring onion greens and sesame seeds and enjoy.
