  1. Add olive oil to a medium to large pan.

  2. Add diced onion and sauté for a couple minutes.

  3. Add ground beef, break into pieces and cook until no longer pink on the inside. Add the taco seasoning or seasoning of choice.

  4. Add corn, black beans and tomatoes. Add sea salt and more seasoning.

  5. Mix well and cook on high for a few more minutes.

  6. Bring to a simmer then cover with cheese.

  7. Cover with a lid for a few minutes to melt cheese.

  8. Enjoy right away or save for later.
