Preheat the oven to 350F then line a baking sheet with parchment paper and set aside.
Cream the butter, granulated sugar, and brown sugar together until light and creamy.
Add in the egg, lemon juice, vanilla extract, and mix until smooth.
Gently mix in the flour, corn starch, baking powder, baking soda, cinnamon, & salt.
Scoop out equally sized cookie dough balls and top them with the cinnamon-sugar mixture.
Chill in the freezer for 15 minutes then bake in the preheated oven for 14 minutes.
Let the cookies cool on the baking sheet for 10 minutes before transferring to a cooling rack to cool fully.
Mix the softened butter, brown sugar, granulated sugar, flour, and cinnamon together in a small bowl then divide into 7 little balls.
Top the cookies with the cinnamon sugar mixture and gently press on top before freezing the cookie dough balls.
Cream the butter, cream cheese, powdered sugar, and vanilla together until smooth and creamy.
Fill a piping bag or a ziplock bag with the cream cheese frosting and pipe the frosting all around to create a beautiful swirl design and enjoy.
