Line a baking sheet with parchment or use silicone molds. Dust with arrowroot powder or powdered sugar.
In a small saucepan, combine honey, lemon juice, and spices.
Heat over medium, stirring constantly, until mixture reaches 300°F (hard crack stage). You will know it's reached this temperature if you drop a small amount into ice water and it hardens.
Drop small circles onto your prepared sheet or silicone molds.
Let cool completely, then dust with arrowroot powder to prevent sticking. Or you can wrap in parchment paper.
Store in an airtight jar for up to 3 months.
