This Pineapple Upside Down Cake Fudge combines the tropical flavors of pineapple with the sweetness of a classic cake, all in a creamy fudge form! It’s a fun twist on the traditional dessert and perfect for any occasion.
Ingredients:
2 cups white chocolate chips
1 can (14 oz) sweetened condensed milk
¼ cup butter (unsalted)
½ cup pineapple juice (from canned pineapple)
¼ cup crushed pineapple, drained
½ tsp vanilla extract
¼ tsp salt
½ cup maraschino cherries, chopped
¼ cup brown sugar (light or dark)
¼ cup chopped pecans (optional, for garnish)
Instructions:
Prepare the Pan: Line an 8x8-inch baking dish with parchment paper or lightly grease it to prevent sticking.
Melt the Fudge Base: In a medium saucepan over low heat, melt the white chocolate chips, sweetened condensed milk, and butter. Stir frequently until smooth and creamy.
Add the Pineapple Flavors: Stir in the pineapple juice, crushed pineapple, vanilla extract, salt, and brown sugar. Continue stirring until the mixture is smooth and well-combined.
Add the Cherries: Gently fold in the chopped maraschino cherries, distributing them evenly throughout the fudge mixture.
Set the Fudge: Pour the fudge mixture into the prepared baking dish, spreading it out evenly. Sprinkle chopped pecans on top (optional) for added crunch and decoration.
Chill the Fudge: Refrigerate the fudge for at least 2 hours or until it is firm and set.
Cut and Serve: Once the fudge has set, remove it from the pan using the parchment paper and cut it into small squares.
