Toasted Couscous, Herb Oil, Broccoli And Almond Salad
  1. Add the couscous into a pot and toast over medium heat for a couple of minutes. Cook the couscous following the packet instructions.

  2. Heat up the oil in a pan and add the broccoli and sea salt. Cook until crispy.

  3. For the herb oil, blend all the ingredients until a vibrant green oil is formed.

  4. In a bowl, combine the cooked couscous, broccoli, almonds, pumpkin seeds, and herb oil.

  5. Add fresh herbs, toss everything together, and serve.
