Summer Flourless Lemon Greek Yogurt Cake
  1. Preheat your oven to 350°F (175°C) and prepare a cake pan by greasing it lightly.

  2. In a mixing bowl, combine the Greek yogurt, eggs, and sugar or honey, and whisk until smooth.

  3. Add the fresh lemon juice, lemon zest, and vanilla extract to the mixture, stirring well to combine.

  4. In a separate bowl, mix together the almond flour, baking powder, and salt.

  5. Gradually incorporate the dry ingredients into the wet mixture, stirring until just combined.

  6. Pour the batter into the prepared cake pan and smooth the top with a spatula.

  7. Bake in the preheated oven for about 30-35 minutes, or until a toothpick inserted into the center comes out clean.

  8. Once baked, allow the cake to cool in the pan for a few minutes before transferring it to a wire rack to cool completely.

  9. If desired, dust the cooled cake with powdered sugar and garnish with fresh berries and mint before serving.
