Cook the pasta according to package instructions. Drain and set aside.
Blend the sauce: Add cottage cheese, milk, mozzarella, cheddar, nutritional yeast, and all seasonings into a blender. Blend until smooth.
Heat a pan on low, then pour in the blended cheese sauce. Stir occasionally and let it reduce slightly for a thicker consistency (about 3-5 minutes).
Add the pasta into the pan and mix well, coating everything evenly.
Remove from heat and let sit for a minute to thicken further.
