  1. Strip out the excess: seeds, cores, water.

  2. Season before blending. Salt pulls the moisture out of the veg, concentrating flavor before it even hits the blender.

  3. Let time do its work—24 hours in the fridge to let everything marry.

  4. Push it through a fine sieve.

  5. Serve it ice cold.
