Spicy Thai Pork Stir-fry
  1. Heat half the oil in a large wok over a high heat. Chuck in the garlic and stir-fry for 10 seconds until fragrant. Add the pork and stir-fry for 3-4 minutes until just cooked. Add the soy sauce and stir-fry for a minute until combined. Throw the holy basil into the wok and add the fish sauce and oyster sauce and stir- fry for 30 seconds until wilted. Add the chillies and mix well.

  2. Whilst the Ka-Prow is finished, heat the remaining oil in a non-stick frying pan over a high heat. Add the eggs and fry for 1-2 minutes, basting in the oil until cooked through.

  3. To serve, pile the Pad Kra-Pow onto a plate with rice and top with an egg. Grab a fork and dive in.
