Heat the olive oil in a pan and sauté the onion until soft. Add the garlic and mince cook until browned.
Stir in tomato paste, grated carrot, tinned tomatoes and seasonings. Simmer for 10-15 minutes until thickened.
Melt butter in a saucepan, stir in flour to make a roux, and cook for 1 minute. Very gradually whisk in milk, stirring continuously until smooth. Once it starts to thicken, add the mustard, cheese and seasoning and stir until melted and creamy.
Cook your macaroni as per the packet instructions.
Then mix the cheese sauce into the pasta and keep some for the topping.
Start with a layer of mac and cheese, then bolognase, then repeat.
Finish with a layer of cheese sauce and some grated cheese and bake in the oven at 190c for 30 minutes.
Garnish with some fresh parsley and enjoy this delicious pasta bake.
