Combine dry ingredients: Add the rolled oats, chia seeds, and pinch of sea salt to a mason jar or airtight container and stir briefly to distribute the chia seeds evenly.
Add wet ingredients: Spoon in the Greek yogurt, then pour in the milk, maple syrup, and vanilla extract.
Stir thoroughly: Stir everything together until fully combined, then wait 5 minutes and stir again to prevent the chia seeds from clumping.
Taste and adjust: Taste the mixture before sealing and add a little more maple syrup if you’d like it sweeter the flavor mellows slightly overnight.
Seal and refrigerate: Put the lid on the jar and refrigerate for at least 6 hours, ideally overnight for 8 hours.
Check consistency in the morning: Stir the oats and add a small splash of milk if they’re thicker than you prefer.
Add toppings and serve: Top with fresh blueberries, granola, nut butter, or your preferred toppings and eat straight from the jar or pour into a bowl.
