Aloo Bhaji (Potato Curry)
  1. Fry the diced potatoes with the cumin seeds and mustard seeds on high heat until they form a nice crust.

  2. Stir in the chilli powder and salt.

  3. Add the half can of chopped tomatoes and let it simmer for 10 minutes on medium heat.

  4. Remove from heat and stir in the garam masala.

  5. Finish with fresh coriander.
