Preheat your oven to 425°F.
In a large bowl, mix together the ground turkey, grated garlic, cumin, garlic powder, onion powder, paprika, dried oregano, salt, black pepper, and ground coriander if you're using it, along with the olive oil until well combined.
Line a sheet pan with parchment paper and spread the turkey mixture in the center, flattening it into a rectangle about half an inch thick.
Using a spatula, score the flattened turkey into six to eight sections and create a line down the middle.
Bake the kebabs in the oven for approximately 15 minutes.
While the kebabs are baking, prepare the pita dough by combining the flour, baking powder, and salt in a bowl.
Incorporate the Greek yogurt into the dry ingredients and mix until the mixture is shaggy.
Add the water and continue mixing until a soft ball of dough forms.
Flour a clean surface and knead the dough for about one minute, folding and turning it, adding more flour if it feels sticky.
Divide the dough into six equal pieces, roll each piece into a ball, and then flatten each ball with a rolling pin to form a pita shape.
Heat a skillet over medium-high heat, drizzle in a bit of olive oil, and cook each pita for 1–2 minutes on each side until they puff up.
Once the kebabs are done baking, brush them lightly with olive oil.
Assemble each pita by placing a kebab inside, then top with chopped cucumber, diced tomato, and a drizzle of white sauce if desired.
