Thomas Caterers’ Famous Carrot Soufflé
  1. Peel Carrots.

  2. Cook until well done.

  3. Drain well.

  4. Melt butter.

  5. In blender- carrots (blend well).

  6. Mix in dry mixture-eggs-butter.

  7. Blend until mixture resembles a milk shake.

  8. Bake in 8"x8" greased pan at 275F for 45 min. (until just firm).

  9. Salt to taste.
