Coconut Curry Butterbeans
  1. Cook cinnamon sticks, onions, garlic and ginger until oil separates.

  2. Add spices and cook briefly.

  3. Add butter beans, salt, coconut milk and kasthuri methi.

  4. Stir and simmer briefly till all heated through.

  5. Tarka: sauté seeds, leaves and garlic in ghee/butter until browned. Pour into curry and stir through.

  6. Serve with breads, rice etc etc.
